luncheon salad ^

4 servings
2 cups Chopped cooked chicken
2 cups Grated carrot
2 tablespoons Finely chopped onion
Unpeeled sweet apples, cored and chopped
Stalks celery, chopped
2 teaspoons Dijon mustard
½ cup Mayonnaise
  Salt and pepper to taste
  Lettuce leaves
1 tablespoon Chopped parsley

Combine chicken, carrot, onion, apples and celery in bowl. Mix mustard with mayonnaise. add to ingredients in bowl and toss lightly.

Season with salt and pepper. Arrange lettuce on individual plates.

Pile chicken mixture in center and sprinkle with parsley.
