Lobster with fruit stuffing

Measure Ingredient
2 mediums Oranges
½ cup Chopped, peeled apple
¼ cup Butter, melted
2 cups Dry bread cubes
3 teaspoons Butter, melted
1½ pounds Lobster, live

Peel, section and dice oranges, reserving ¼ cup juice. Toss together bread cubes, diced oranges, reserved juice, apple, 3 Tbsp.

melted butter 7¼ tsp. salt. Plunge live lobsters head first into enough boiling water to cover. Cook 2 minutes. Remove from pan; place lobster on backs on cutting board. Cut in half lengthwise, draw knife from head down to base of the abdomen. Discard all organs in the body section, except the brownish green liver. Remove black vein that runs down to tail. Crack large claws and spread body open.

Fill each lobster cavity with stuffing. Place lobsters, shell side down on baking sheet. Baste with melted butter and bake at 350 F.
