1¼ cup Rich's whip
Eggs separated
⅓ cup Fresh lemon juice
1 cup Sugar
Lemon, grated rind of
200 grams Cookies (Petit Buerre)

1. Beat egg whites till stiff. Beat the Rich's Whip until stiff. Beat the yolks, add sugar and lemon juice. Fold the whites, then the lemon juice.

2. Make a crumb crust with cookies, some cinnamon and margarine. Put ⅔ of crumb mixture in pan, pour batter into pan, then s[prinkle the rest of the crumbs on top. Freeze.
