leek soup

6 servings
1½ pounds Leeks (about 6 cups) washed, trimmed, and cut into 1 in. pieces
3 cups Chicken Broth
Apples, peeled and cut into 1/2 inch pieces
Potato, peeled and thinly sliced
½ cup Orange Juice
½ cup Tomatoes, chopped
½ cup Carrots, thinly sliced
1 tablespoon Fresh basil OR 1 1/2 t dried
½ teaspoon Curry Powder
  Salt and Pepper to taste

Combine all ingredients in a soup kettle. Cover and bring to a boil.

Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve.
