7 pounds Roma tomatoes - diced
1 pounds Brown onions - diced
1 tablespoon Lemon juice
1 tablespoon Lime juice
1 tablespoon Chopped cilantro
  Jalapeno peppers - to taste finely
  ; chopped
  Salt and pepper

Directions: Core the tomatoes, removing seeds. Dice the tomatoes into ⅜" cubes. Marinate the tomatoes in the lemon juice for six hours prior to use.

Combine the tomatoes, onions, lemon juice, lime juice, cilantro and jalepenos. Season with salt and pepper. Store in refrigerator until using.

Garnish with chopped cilantro before serving.
