|-Kumquats are different than other citrus fruits in that both skin and pulp are edible. They have an intense orange flavor when eaten raw or cooked. Kumquats store well under refrigeration. Use bright orange kumquats as a garnish, poach in honey and use as a sauce base for vegetables or desserts. Make marmalades and preserves, and of course eat out of hand. Some recipes will require that the tiny seeds be removed.|
4 Slices Whole wheat or white bread, cut into small cubes 2 C Milk ½ C Sugar ¼ C Kumquats, chopped ½ t Cinnamon ½ t Vanilla ¼ t Nutmeg Place cubed bread in a 9" round quiche pan or baking dish. Combine all other ingredients and mix well. Pour mixture over bread. Bake at 325 degrees for 40 minutes, or until center, when tested, is dry. Serve warm or at room temperature with light cream. Serves 6.
