Kornkloesse (corn meal dumplings)

Yield: 1 recipe

Measure Ingredient
1 cup Yellow corn meal
2 teaspoons Salt
2 cups Boiling water
1 cup Flour
2½ teaspoon Baking powder
\N \N Few grains pepper
1 \N Egg
¾ cup Cooked or canned whole ker- nel corn
1 teaspoon Finely chopped onion
2 tablespoons Melted butter or substitute

: Slowly add corn meal and salt to water, cook, stirring constantly, 2 minutes or until thick. Remove from heat; cool. Sift together ¾ cup flour, baking powder and pepper. Add to corn meal and mix well. Beat egg and add together with corn, chopped onions, and butter. : Shape into balls; roll in remaining flour. Drop on hot stew, cover tightly and cook 12 minutes without removing cover.

These are fine with boiled chicken or pork.
