| Measure | Ingredient |

| ½ medium | Onion; minced |
| 4 | Cloves garlic; minced |
| 1 tablespoon | Bacon fat |
| 28 fluid ounce | Catsup |
| 8 | Chipotles en adobo; minced |
| 2 tablespoons | Good chile powder; heaping |
| 2 teaspoons | Cumin |
| 2 teaspoons | Thyme |
| 6 fluid ounce | Amber beer |
| ½ cup | Cider vinegar |
| 2 tablespoons | Prepared mustard |
| 1 tablespoon | Worcestershire |
| 1 tablespoon | Nuoc mam |
| ¼ cup | Bourbon |
| ½ tablespoon | Cocoa |
| Black pepper; to taste |
Saute onions and garlic on med high heat until soft. Add everything else.
Simmer uncovered until thick.
