kaffir lime leaf, black eye and aduki bean croquettes

MeasureIngredient
4½ ounce Black eyed beans; cooked
Kaffir lime leaves
1 in piece lemon grass
4½ ounce Aduki beans; cooked
1 in piece root ginger; chopped
Red chilies; (1 to 2)
  Groundnut oil for frying

1. In a food processor combine all the ingredients and blend until a rich paste has developed.

2. Form small medallions from the paste.

3. Heat the oil in a large frying pan and shallow fry the croquettes for 3-4 minutes.

NOTES : I bought these delicious croquetres while shopping down one of the busy streets in Chiang Mai. I have adapted the recipe to create a more interesting balance of flavours.
