Irish coffee cooler

Yield: 1 Servings

Measure Ingredient
1½ cup Strong freshly brewed black coffee
5 ounces Irish whiskey
2 smalls Scoops coffee ice cream
1 pint Heavy cream
2 teaspoons Sugar or to taste
2 teaspoons Finely ground cinnamon mixed with:
2 teaspoons Extra fine white sugar
1 \N Egg white

Place chilled coffee, ice cream and sugar in blender and whip until frothy.

Add Irish whiskey and blend for 5 addition- al seconds. Whip heavy cream lightly, stopping before peaks are formed and place in a separate bowl. Mix sugar and cinna- mon until well-blended and set aside on a plate. Whip egg white very lightly with a fork so that it becomes a frothy liquid without being stiff. Dip chilled glasses in egg white, then into cinnamon mixture.

Pour blender mixture into glasses. Top off with lightly whipped cream spread evenly with a spoon on top of Irish coffee mixture. Do not stir.

Serves 2 generously.
