3 pounds | Pork tenderloin |
2 larges | Garlic cloves; crushed |
2 teaspoons | Black pepper; crushed |
1 teaspoon | Thyme |
1 teaspoon | Salt |
1 cup | Wood chips for smoking; soaked in water |
Bring pork to room temperature and season with garlic, pepper, thyme and salt. Place drained wood chips at bottom of grate, place pork on rack above wood chips and cover. Cook for 45-55 minutes at 375 degrees, to an internal temperature of 155 degrees. Remove from heat and slice on an angle for service.
NOTES : Any hardwood or fruitwood will add flavor to this dish.
