| Measure | Ingredient |

| ¼ cup | Plus 1 tbs hoisin sauce |
| 3 tablespoons | Honey |
| 2 tablespoons | Soy sauce |
| 2 tablespoons | Dry sherry |
| 2 tablespoons | Sesame seeds |
| 1 | Jalapeno chile seeded and minced |
| 1 tablespoon | Sesame oil |
| 1 tablespoon | Curry powder |
| 1 tablespoon | Orange zest finely grated |
| 1 tablespoon | Fermented black beans |
Combine all the ingredients in a medium bowl.
Use with any kind of beefsteak, lamb, or duck. Marinate 1-3 hours or use as a dipping sauce.
