Hummus - middle eastern chickpea spread

Yield: 1 Servings

Measure Ingredient
2 cans Chickpeas or garbanzo beans
3 \N Cloves garlic; (3 to 4)
½ cup Tahini (sesame seed butter)
\N \N Juice of 1/2 lemon
2 tablespoons Tamari or strong soy sauce
½ cup Minced parsley

In a food processor or blender combine all ingredients at medium speed until fairly smooth. The dip will be thick. Fold in the minced parsley.

Refrigerate to store. Can be served with pita or pocket bread or as a dip with raw vegetables.

Note: Tahini is often available in natural food stores or gourmet shops.

"Natural" style peanut butter can be substi- tuted, if necessary. Tamari can be purchased from natural food stores or in the Oriental foods section of your grocery. Hummus is high in protein and fiber, with a pate-like flavor.
