horseradish-crusted rockfish

| 4 | Rockfish fillet |
| ½ cup | Mayonnaise |
| 2 tablespoons | Horseradish |
| 1 tablespoon | Bread crumbs |
| ½ teaspoon | Minced garlic |
| 1 | Anchovy fillets; optional |
| 1 pinch | White pepper |
| Flour; to coat |
Blend mayonnaise, horseradish, bread crumbs, garlic, anchovy and pepper in a food processor. Dredge rockfish in flour then coat with horseradish mixture. Bake in 350 degree oven for 9 to 12 minutes until fish flakes easily with a fork. Serve with Dill-Dijon Butter.
