Honeycomb and ginger soft scoop in brandy snap baskets

1 \N 1 liter tub soft scoop dairy ice-cream
4 \N Crunchie bars; cut into small
\N \N ; pieces
175 grams Ginger in ginger wine; roughly chopped,
\N \N ; reserving 3
\N \N ; tablespoons of
\N \N ; liquor (6oz)
1 \N Traditional brandy snap baskets; ¥

Scoop the ice-cream into a bowl and combine with the crunchie bars, ginger and liquor, mix to incorporate. Place in the freezer to harden up again.

Transfer scoops of the ice-cream mixture into the brandy snap baskets and serve immediately.
