¼ cup | Honey |
⅔ cup | Lowfat buttermilk |
½ cup | Peanut butter; chunky |
½ cup | Banana; mashed |
½ cup | Egg |
⅛ ounce | Vanilla |
1⅓ cup | Flour |
⅓ cup | Oatmeal; uncooked |
⅞ teaspoon | Baking powder |
⅞ teaspoon | Baking soda |
¼ teaspoon | Cinnamon |
\N \N | Salt; to taste |
¼ cup | Peanuts; chopped |
1. Combine and mix honey, buttermilk, peanut butter, bananas, eggs and vanilla.
2. Combine all remaining ingredients except chopped peanuts. Stir into honey mixture until just moistened.
3. Portion ¼ cup into greased or lined muffin tins. Top each cup with 1 teaspoon chopped nuts.
4. Bake in 400 F oven 18 to 20 minutes.
