| ¼ cup | Minced garlic |
| 1 cup | Hoisin |
| ½ cup | Fresh lime juice |
| ½ cup | Chopped candied ginger |
| 1 teaspoon | Freshly-ground white pepper |
| ½ teaspoon | Salt |
Saute shallots and garlic in 1 tablespoon of canola oil. Add hoisin and saute. Add juice, ginger and white pepper. In a blender, puree all. With blender running, slowly add remaining oil until smooth. Check for seasoning.
