Hawaiian muffins^

Yield: 6 servings

Measure Ingredient
¼ cup Mashed banana
¼ cup Drained crushed pineapple,
\N \N Unsweetened
3½ tablespoon Orange juice concentrate
½ cup Lowfat yogurt
2 \N Egg whites, lightly beaten
½ cup Oat bran flakes
½ cup Flour
½ teaspoon Baking soda

Preheat oven to 375F. Spray 6 muffin cups with pam and set aside.

Combine banana, pineapple, yogurt, egg whites and bran flakes. Set aside for flakes to soften. Mix with combined flour and baking soda.

Spoon into muffin cups and bake until golden brown and a toothpick inserted in center comes out clean, about 25 minutes.
