⅛ teaspoon | Salt |
⅛ teaspoon | Pepper |
2 tablespoons | Butter; melted |
2 tablespoons | Butter |
1 cup | Minced onion |
2 \N | Red bell pepper; cut in |
\N \N | .. strips |
1 pint | Tomatoes; cut up, with juice |
½ teaspoon | Salt |
⅛ teaspoon | Red pepper |
SAUCE
*Can also use haddock, grouper or red snapper.
Preheat broiler. Season fish with salt & pepper, brush with butter and broil until opague, turning once.
Sauce:
Cook onion and pepper in butter until just softened. Add remaining ingredients; simmer about 10 minutes. Spoon over fish before serving.
Makes 4 to 6 servings.
