|Salt pork; sliced thin|
|2 tablespoons||Lemon juice|
|Salt & pepper|
|½ cup||Bread crumbs|
Wash and dry fish. Place salt pork in a pan, lay one fish steak on pork and pour on lemon juice. Season. Dip oysters in butter, then in crumbs, and put on top of fish. Place the second steak over the oysters and season as before, laying salt pork over all. Bake 30-40 minutes, basting often with pan juices and lastly butter. Remove pork from top, cover with crumbs, brown and serve.
Many of the recipes in this collection did not contain amounts or oven temperatures. I have typed them in as they appear in the book, typos and all.
