1 cup | Water |
1 teaspoon | Butter |
½ teaspoon | Salt |
1 cup | Flour |
3 \N | Eggs |
1 cup | Parmesan cheese, grated |
Bring first three ingredients to a boil. Add 1 cup flour and stir over heat until the dough leaves the spoon. Add 1 whole egg while dough is hot. Add 2 more eggs after 5 minutes when well mixed. Add 1 cup grated parmesan cheese.
Drop the dough with a tablespoon into large saucepan of boiling, salted water. When dumplings rise, let boil slowly for 3 minutes. Dry on a towel, then put layer of dumplings in flat baking dish and cover with cream sauce and grated cheese. Bake in 400 to 450 oven until golden brown.
Cream Sauce:
Make bechamel sauce with veal or chicken stock and a little cream to which grated American or parmesan cheese has been added.
