Glazed baked chicken ^

Yield: 4 servings

Measure Ingredient
2 \N Frying chickens (2 1/4 lb), halved
2 teaspoons Vegetable oil
2 tablespoons Honey
1 tablespoon Moderately hot mustard
2 teaspoons Curry powder
½ teaspoon Salt

Preheat oven to 425. Cut 4 pieces of aluminum foil large enough to wrap each chicken half. Brush each with oil and lay cut side down on foil. Combine honey with mustard, curry powder and salt; brush chicken. Wrap foil loosely around chicken halves; seal edges well.

Place on roasting rack and bake in center of oven for 30 minutes.

Open foil and continue to cook another 20 minutes, or until skin is crisp and brown. Place each foil parcel on individual plate, remove foil and serve.
