giardiniera (pickled vegetables)

MeasureIngredient
Carrots, peeled and sliced diagonally
Celery stalk, sliced diagonally
2 cups Cauliflower, cut into small chunks
½  Red pepper, quartered and sliced
Green onion, sliced
Clove garlic, sliced
1 cup White vinegar
½ cup Dry white wine
¼ cup Water
¼ cup Apple juice
2 teaspoons Salt (omit for low-sodium diets)
Peppercorns
1 teaspoon Dried dill weed

Mix all the ingredients and refrigerate in a closed jar for two days.
