2 (15 oz.) cans chick-peas (garbanzo beans), drained ¼ c tahini (Middle Eastern sesame seed paste) 2 T extra-virgin olive oil
1-½ T fresh lemon juice 2-6 (depending on your taste) large garlic cloves, crushed ½ t salt Chopped parsley and paprika Pita Bread
1. In a food processor, combine chick-peas, tahini, olive oil, lemon juice, garlic, and salt. Puree until smooth. If made in advance, transfer to a bowl, cover and refrigerate. 2. Before serving, top with chopped parsley, and a dusting of paprika. Serve with pita bread.
