| 10 | Whole heads of garlic |
| 2 tablespoons | Extra-virgin olive oil |
| 2 tablespoons | Salad oil |
| 1 tablespoon | Thyme or other herbs |
| 1 tablespoon | Sea salt |
| ½ teaspoon | Fresh ground pepper |
Slice the top third off of each garlic pod. Combine the oils in a small shallow baking dish or pie pan. Distribute the seasonings equally in the oil. Arrange the pods, cut side down, in the pan.
Roast for abput 35 minutes in a 350øF oven. The cloves of garlic should be soft and the cut edges should be slightly caramelized.
