Fruit and wine compote

Yield: 4 servings

Measure Ingredient
4 smalls Pears
1 \N Orange
12 \N Moist prunes
\N \N A 2.5 cm; (1 in) stick
\N \N ; cinnamon
2 \N Coriander seeds
1 \N Clove
¼ \N Bay leaf; (optional)
⅓ \N Vanilla pod
4 tablespoons Castor sugar
1½ cup Good red wine

Peel pears, and wash and cut orange into ½ cm (¼ in) slices.

Gently place pears, stalk up, in saucepan. Place prunes in between pears and add cinnamon, coriander seeds, clove, bay leaf, vanilla and castor sugar.

Top with orange slices and add wine. If necessary add water so that there is just enough liquid to cover the fruit.

Bring to boil, lower to a simmer, and poach pears for 25 to 30 minutes until soft. Leave fruit to cool in liquid.

Remove spices and serve fruit and liquid from an attractive serving dish.
