Frothy mocha cocoa

Yield: 8 servings

Measure Ingredient
4 ounces Unsweetened Baking Chocolate
1 cup Sugar
¼ cup Instant Coffee Powder
1 cup ;Water
3 cups Milk
2 cups Light Cream Or Half & Half
2 teaspoons Vanilla Extract

Combine the chocolate, sugar, coffee powder and water in a 3-quart saucepan. Cook over low heat, stirring constantly, until the chocolate is melted. Increase the heat to medium and continue to cook until the mixture comes to a boil. Reduce the heat to low and simmer for 4 minutes, stirring occasionally. Stir in the milk, cream, and vanilla extract. Heat for 5 minutes or until hot. Remove from the heat and beat, with a rotary beater, until foamy. Pour into a thermos jug or serve at once. Makes eight 6-ounce servings.
