Fritatta appetizer

Measure Ingredient
2 \N Jars (6 oz) marinated artichoke hearts, chopped; reserve marinade
3 \N Green onions, chopped
1 large Garlic clove, mashed
4 \N Eggs, beaten
6 \N Soda crackers, crushed
½ pounds Sharp cheddar cheese, shredded
2 tablespoons Parsley, chopped
\N \N Salt & pepper to taste

Saute onion and garlic in reserved marinade until limp. Beat eggs and add crackers, cheese, parsley, chopped artichokes, onion/garlic mixture, and salt and pepper.

Put all into a buttered 8 x 8 baking pan. Bake at 325 degrees for 35 - 40 minutes, until set (test with a toothpick).
