1 teaspoon | Curry powder |
¼ teaspoon | Salt |
1 cup | Chilled club soda |
¼ pounds | Mozzarella cheese; coarsely grated |
1 tablespoon | Finely chop'd fresh cilantro |
16 \N | Zucchini blossoms; pistils removed if desired * |
\N \N | Canola oil for deep-frying |
Mix together flour, curry powder, and salt. Add club soda; mix until smooth. Let batter stand 10 minutes.
In a small bowl toss mozzarella and cilantro. Stuff 1 tablespoon into each blossom, pressing ends of blossom closed.
Heat 1 inch oil in skillet (375ø F). Dip the filled blossoms one at a time in batter. Coat completely. Fry, turning once, until golden and crisp. Drain on paper towels; sprinkle with salt. Serve warm.
