Fried perch with cucumber butter

Measure Ingredient
2 pounds Perch
½ teaspoon Salt
¼ teaspoon Pepper
½ cup Flour
2 tablespoons Cornstarch
1 cup Water
1 \N Slightly beaten egg yolk
1 \N Well beaten stiff egg white
\N \N Corn oil
\N \N CUCUMBER BUTTER

Carefully wash fish; drain. Sprinkle with salt & pepper: set aside.

Combine flour & cornstarch. Blend together water & egg yolk; stir into flour mixture until smooth. Fold in beaten egg white. Dip fish into batter; deep fry at 350 for 2-3 minutes, depending of size of fish, or until fish is golden brown. Drain on paper towel. Serve with Cucumber Butter.
