⅔ cup | Unseasoned packaged bread crumbs |
¼ cup | Unsifted all-purpose flour |

1. Cut tomatoes crosswise into ⅛-inch-thick slices. In small bowl, beat together eggs, salt, and pepper until frothy. In separate small bowls, place bread crumbs and flour.
2. In large skillet, melt 1 T shortening over medium heat. Dip each tomato slice into egg, then flour, then egg again, and then crumbs.
3. Fry tomato slices until golden brown on one side. Turn and fry until golden on remaining side-4 to 5 minutes total, adding more shortening as needed. Serve immediately or keep warm in 300'F oven until ready to serve-no longer than 15 minutes.
