2 pounds | Large shrimp, cleaned, leaving tail intact |
1 cup | Sifted flour |
½ teaspoon | Sugar Pinch curry powder |
1 \N | Egg |
1 cup | Up water |
2 \N | Rsp oil |
½ teaspoon | Salt Oil for frying |
Slit shrimp down back and spread apart butterfly fashion. Pull tail thru slit. Combine flour, sugar, and curry powder. Add egg, water, and 2 tsp oil; beat well. Dip shrimp in batter. Heat oil to 375 in deep skillet or deep fryer. Fry, a few at a time, until golden brown.
Drain on paper towels.
