| 1 | Fresh peach; peeled and chopped | |
| 125 | grams | White grapes; halved (4oz) |
| 8 | Ratafia biscuits; (8 to 10) | |

| ; frâiche | ||
| 125 | G; (4-6oz) soft light, (125 to 175) | |
| ; brown sugar | ||
| Fresh mint to decorate | ||
Directions
Arrange the strawberries, peach and grapes in the base of a souffl dish or 4 individual ramekin dishes.
Place the ratafia biscuits on top.
Spoon over the crme frâiche to completely cover the fruit and chill for at least 1 hour.
Sprinkle over the sugar and smooth the top, place under a preheated high grill for 1-2 minutes until the sugar has caramelised.
Serve decorated with sprigs of fresh mint.
