Fresh minted mango-chutney burger topping

Measure Ingredient
1 \N Ripe mango (1 lb), halved,
\N \N Pitted peeled & cut in small
\N \N Pieces
2 tablespoons Minced red onion
2 tablespoons Fresh lime juice
1 tablespoon Minced crystallized ginger
¼ teaspoon Crushed coriander seeds
¼ teaspoon Crushed red pepper
1 tablespoon Chopped fresh mint

Gently mix all ingredients, except mint, in a bowl until well blended.

Cover & chill at least 2 hours or up to 4 days. Stir in mint 15 minutes before serving.
