Fresh fruit brul‚e

227 grams Punnet strawberries; sliced (8oz)
1 \N Fresh peach; peeled and chopped
125 grams White grapes; halved (4oz)
8 \N Ratafia biscuits; (8 to 10)
2 \N 200 g; (7oz) tubs crŠme
\N \N ; frâiche
125 \N G; (4-6oz) soft light, (125 to 175)
\N \N ; brown sugar
\N \N Fresh mint to decorate

Arrange the strawberries, peach and grapes in the base of a souffl‚ dish or 4 individual ramekin dishes.

Place the ratafia biscuits on top.

Spoon over the crŠme frâiche to completely cover the fruit and chill for at least 1 hour.

Sprinkle over the sugar and smooth the top, place under a preheated high grill for 1-2 minutes until the sugar has caramelised.

Serve decorated with sprigs of fresh mint.
