French toast (lf)

Measure Ingredient
1 \N Eggs -- *
\N dash Salt
2 \N Eggs -- white only
2 slices Bread -- whole-grain
2 tablespoons Milk -- skim
\N \N Nonstick cooking spray
¼ teaspoon Cinnamon

]Beat the egg, egg whites, and milk with the cinnamon and salt until frothy. Dip the bread in the egg mixture, coating both sides. Heat a skillet or griddle and spray with nonstick cooking spray. "FRY" the bread in the heated skillet, turning once, until golden brown on both sides. Good served with a breakfast spread, fresh fruit, applesauce, or a Tblspoon or 2 of real maple syrup. VARIATIONS: Omit the cinnamon, and substitute ¼ tsp of grated lemon or orange peel. You can also use ½ cup egg substitute instead of the whole egg and add just 1 egg white.
