French salad whole-meal sandwich

Measure Ingredient
½ cup Bottled sliced roasted red peppers; drained
½ \N Red onion; very thinly sliced
1 cup Sliced Roma tomatoes
2 tablespoons Capers
\N \N Salt and pepper
2 tablespoons Crumbled feta cheese
½ cup Low-calorie Italian dressing
1 \N Round artisan loaf
\N \N Halved lengthwise and scooped out
2 cups Chopped romaine lettuce

In large bowl, combine peppers, onions, tomatoes, and capers. Season with salt and pepper, then add cheese and ¼ cup dressing. Toss well. Pile into loaf. Top with lettuce. Drizzle with remaining dressing. Replace top half of loaf. Wrap tightly in plastic wrap and let stand 30 minutes.

Makes 6 to 8 servings.
