5 cups | Water |
1½ pounds | Shrimp |
3¾ cup | Corkscrew macaroni-uncooked |
1 pack | Chinese pea pods - 6 oz |
½ cup | Water chestnuts; sliced, Drained |
½ cup | Mayonnaise |
2 tablespoons | Parsley; chopped |
1½ tablespoon | Pimiento; chopped |
⅛ teaspoon | Salt |
⅛ teaspoon | Pepper; coarsely ground |
Bring water to a boil - add shrimp and cook 3 to 5 minutes - drain well, rinse with cold water and chill. Cook macaroni according to package directions, drain - rinse with cold water and drain again. Cook pea pods according to package directions - drain, set aside. Combine shrimp, macaroni, pea pods and remaining ingredients in a large bowl, toss lightly until well coated - may add more mayonnaise if needed. Chill at least 6 hours.
