Festive macaroni shrimp salad

Yield: 6 Servings

Measure Ingredient
5 cups Water
1½ pounds Shrimp
3¾ cup Corkscrew macaroni-uncooked
1 pack Chinese pea pods - 6 oz
½ cup Water chestnuts; sliced, Drained
½ cup Mayonnaise
2 tablespoons Parsley; chopped
1½ tablespoon Pimiento; chopped
⅛ teaspoon Salt
⅛ teaspoon Pepper; coarsely ground

Bring water to a boil - add shrimp and cook 3 to 5 minutes - drain well, rinse with cold water and chill. Cook macaroni according to package directions, drain - rinse with cold water and drain again. Cook pea pods according to package directions - drain, set aside. Combine shrimp, macaroni, pea pods and remaining ingredients in a large bowl, toss lightly until well coated - may add more mayonnaise if needed. Chill at least 6 hours.
