Ensalada de naranjas y cebollas - (orange and onion salad)

Yield: 4 servings

Measure Ingredient
3 larges Navel oranges -; (perfect)
1 medium Red onion
2 tablespoons Blanched sliced almonds
½ teaspoon Sugar
3 tablespoons Red wine vinegar
6 tablespoons Extra-virgin olive oil
9 \N Wine grapes
2 \N Scallions; sliced lengthwise,
\N \N Paper thin
\N \N Salt; to taste
\N \N Freshly-ground black pepper; to taste

Remove peel and pith from oranges and slice into ⅛-inch slices and lay on platter. Slice red onion paper thin and lay rings over oranges. Sprinkle almonds over oranges. In a small bowl, whisk together sugar, vinegar and oil to emulsify, and pour over salad. Sprinkle with wine grapes and scallions and season lightly with salt and pepper. This recipe yields 4 servings.
