1 each | Stalk of celery, chopped |

¼ cup | Chopped parsley |
1 pounds | Seasoning ham |
1 pounds | Smoked sausage |
Cover beans with water and boil 2 minutes. Let soak in covered pot at least 1 hour. Drain. Fill pot with beans and onion ¾ full with water. Add garlic, celery, thyme, bay leaves, parsley and seasoning ham. Cook over medium heat, simmering, 2½-3 hours. Cut sausage into slices. Place in ½ inch water in skillet. Cook until water evaporates and sausage is brown. Smash some of the beans against the side of the pot, until mixture is creamy. Add hot sauce to taste.
