Egg and bacon fajitas

Yield: 4 Servings

Measure Ingredient
4 \N Fatfree or lowfat flour tortillas, 8-inch diameter
8 larges Eggs
¼ cup Sliced scallions
1 tablespoon Dijon mustard
½ teaspoon Salt
¼ teaspoon Pepper
2 teaspoons Butter or margarine
4 ounces Sliced Canadian bacon, in strips

Heat tortillas as directed on package. Meanwhile, whisk eggs, scallions, mustard, salt and pepper in a large bowl until blended. Melt butter in a large nonstick skillet over medium-high heat. Add bacon and cook 2 minutes, stirring occasionally, until golden in spots. Add egg mixture and cook, stirring often, until set.

Place ¼ of the egg mixture in the middle of each tortilla. Fold 1 end of tortilla about 1 inch over egg mixture. Fold right and left sides over folded end.
