Easy beef stir fry (low fat)

Yield: 6 Servings

Measure Ingredient
1 pounds Lean boneless sirloin,
\N \N Trimmed, and cut into 1/4
\N \N Inch
\N \N Strips (if you'11 stick the
\N \N Steak in the freezer for
\N \N About
30 \N Minutes, it'll slice more
\N \N Easily)
2 teaspoons Peeled, minced ginger root
¼ teaspoon Grated orange rind
½ cup Orange juice
2 tablespoons Balsamic vinegar
2 tablespoons Low-sodium soy sauce
2 teaspoons Cornstarch
1 teaspoon Sesame oil
½ pounds Fresh snow pea pods (be
\N \N Sure ends are trimmed and
\N \N Strings are removed)
½ cup Fresh bean sprouts
½ cup Celery, sliced on the
\N \N Diagonal
½ cup Red pepper, sliced into
\N \N Strips
3 cups Cooked brown rice (use the
\N \N Instant variety - it's
\N \N Great)
\N \N Makes 6 servings.
\N \N Serving has about 250
\N \N Calories
\N \N And 5 grams of fat.

In a large zip-lock plastic bag, combine ginger root, orange rind, orange juice, vinegar and soy sauce. Zip bag and mix thoroughly to make marinade.

Add meat strips and place in refrigerator for 30-45 minutes. Remove meat strips and add cornstarch to remaining marinade. Zip bag and mix cornstarch into marinade. Spray nonstick skillet with nonstick cooking spray and heat to medium high. Add meat strips and stir-fry for 5 minutes. Remove from skillet. Drizzle sesame oil over skillet. Add snow peas, bean sprouts, celery and pepper and stir-fry 3 minutes. Add steak strips and reserved marinade and stir-fry an additional 2-3 minutes. Mixture should be slightly thickened. Serve over rice.
