In medium skillet brown chicken slowly in the 2 tbsp butter about 10 minutes, turning once. Remove chicken from pan, reserving drippings.
Cook onion, bay leaf, curry powder, salt, and red pepper in ther reserved drippings till onion is tender. Remove from heat. Stir hot water, dried apples, apricots, raisins, sugar, bouillon granules, and lemon juice into onion mixture in skillet. Return chicken to skillet. Bring to boiling, reduce heat. Cover and simmer 30-35 minutes or till chicken is tender. In small skillet melt the 1 tbsp butter, stir in sliced banana and heat through. Serve chicken with banana, peanuts, and rice. Makes 2 servings.
