Down home ham biscuits

Measure Ingredient
2½ cup Flour
3 teaspoons Baking powder
1 teaspoon Salt
½ teaspoon Baking soda
1 tablespoon Sugar
3 tablespoons Shortening
¾ cup Buttermilk; up to 1
2 tablespoons Melted butter

Combine first 5 dry ingredients and mix well. Cut the shortening with a pastry blender until mixture resembles coarse meal. Gradually stir in enough milk to form ball of dough. Turn out onto floured surface and knead a few times. Add more flour if necessary. Pat to ½ inch thick. Cut with 2-inch biscuit cutter. Place biscuits, touching each other in a greased pan. Bake at 425 (preheated) degree oven for 15 to 20 minutes or until done. Brush with melted butter. Cut biscuit in half and place ham slice (see heating instructions below) inside. In a hurry...try substituting buttermilk biscuits in the pop-open tube...find them in your grocer's dairy section.

To heat ham, pan fry in nonstick pan, adding a small amount of water. Cook over medium heat for 2 and ½ minutes each side. To microwave...place ham slice on a paper-towel lined paper plate. Cook for one minute at medium power; turn and cook for 30 more seconds or until tender. In the oven...place ham in a heavy baking dish with a small amount of water or other liquid. Bake at 350 degrees for approximately 10 minutes or less, until tender.
