| ⅔ cup | Graham cracker crumbs |

| 15 ounces | Low-fat ricotta |

| 1 tablespoon | Grated lemon rind |
| 1 tablespoon | Rum extract or rum |
| 4 packs | Sweet 'n Low |
| 2 tablespoons | Almonds; slice/blanch |
| 4 | Cherries; chop |
| 1 tablespoon | Dark raisins |
Make crust of crumbs and margarine. Put in pan. Bake in 375~ oven for 7 minutes or until crisp. Put ricotta in bowl; add eggs. Mix and add milk, sugar and rum extract. Blend well. Pour over crust. Sprinkle almonds, cherries and raisins over top. Bake at 375~ for 30 minutes.
