MeasureIngredient
15 ounces Skim milk ricotta
1 medium Can crushed pineapple; (reserve juice)
Egg
1 teaspoon Vanilla
6 packs Artificial sweetener
1 pinch Salt
½ cup Pineapple juice; (from can of pineapple)
1 teaspoon Lemon juice
1 pack Unflavored gelatin

Mix first 6 ingredients. soften gelatin in pineapple juice and add to mixture. Pour into 9-inch pie plate and sprinkle cinnamon on top. Bake for 15 minutes at 350 degrees. Cool and chill.
