Diabetic spaghetti sauce

Yield: 6 servings

Measure Ingredient
1 teaspoon Vegetable oil
2 cloves Garlic, chopped
1 medium Onion, chopped
1 can Tomatoes, mashed or pureed
1 cup Water or beef broth
¼ cup Tomato paste
1 tablespoon Dried parsley
1 teaspoon Salt
½ teaspoon Oregano
½ teaspoon Basil
½ teaspoon Thyme
¼ teaspoon Ground cloves
¼ teaspoon Pepper

Heat oil in a heavy saucepan. Saute garlic and onion for three minutes or until limp. Stir in tomatoes, water and tomato paste. Add parsley, salt, oregano, thyme, basil, cloves and pepper; stir well.

Bring to a boil, reduce heat and simmer, stirring occasionally for one hour, until sauce is reduced by ¼.
