Dear abby's easy sweet potato or yam pie

Yield: 6 Servings

Measure Ingredient
\N 3 eggs
\N 1 teaspoon ground nutmeg
\N 1 teaspoon vanilla

1½ cups cooked yams or sweet -- potatoes -- puree 1 ¼ cups sugar ½ cup butter or margarine -- melt ¼ cup evaporated skim milk ¾ teaspoon lemon extract 1 9" unbaked deep-dish pie -- shell Preheat oven to 350~. In processor combine all ingredients except crust.

Process until well-blended. Pour into unbaked pie shell. Bake for 50 to 55 minutes or until knife inserted in center comes out clean and pie is golden-brown.
