3 cups | All purpose flour |
1 teaspoon | Baking soda |
1 pounds | Dates, chopped |
1 cup | Shortening (crisco) |
1½ cup | Lightly packed brown sugar |
2 eaches | Eggs |
2 teaspoons | Vanilla |
1 cup | Oatmeal |
¾ cup | Coconut |
½ cup | Chopped nuts |
1¼ teaspoon | Cinnamon |
¼ teaspoon | Nutmeg |
Toss flour, baking soda and dates together to coat dates. Cream shortening, sugar, eggs, and vanilla together in large bowl on medium speed of electric mixer until light and creamy. Stir in remaining ingredients with date mixture. Mix well. Drop dough by tbsp's onto greased baking sheet, leaving room for spreading. Bake at 375F for 8-10 minutes, or until light golden.
