¾ cup | Flaked coconut |
3 ounces | Cream cheese, at room temperature |
2 tablespoons | Mayonnaise |
1 cup | Chopped cooked chicken |
1 cup | Chopped walnuts |
2 tablespoons | Minced onion |
1½ tablespoon | Curry powder, to taste |
½ teaspoon | Salt |
1. Preheat oven to 350ø. Spread out coconut on a small baking sheet & toast in oven until lightly brown, 12½ minutes. Let cool slightly.
2. In a small bowl, blend together cream cheese & mayonnaise until smooth. Add chicken, walnuts, onion, curry powder & salt. Mix well.
3. Form chicken mixture into 1" balls. Roll in toasted coconut to coat. Cover & refrigerate until chilled.
